Killer Zucchini Bread

Serves: 2 loaves (24)

Prep time: 20 minutes
Cook time: 1 hour (or 20 minutes if using a muffin tin)

Ingredients:
3 cups all-purpose flour (or GF alternative)
1 tsp salt
1 tsp bicaerb / baking soda
1 tsp baking powder
1 tbsp cinnamon
3 eggs
120 ml (1/2 cup) vegetable oil
120 ml (1/2 cup) unsweetened applesauce
1 tbsp vanilla extract
1 cup white or raw sugar
1/2 cup packed brown sugar
3 cups grated zucchini (do not drain the water)

salted butter (for serving)

This is killer--and open to interpretation of the meaning. This loaf is spongy and soft, largely due to the incredibly easy zucchini and applesauce. I used GF flour and it still held together well without crumbling. Imagine flavours of warm cinnamon and apple mixed with caramel. I know. It is weird. We're talking zucchini. The joy of zucchini is its heavy water content (no draining for this recipe, please!) and its malleability toward flavour. The end result is a sweet, warm 'bread' that is perfect with a slab of salted butter. 

Optional: add chopped walnuts and/or chocolate chips.

Ingredients:

1 tsp bicarb / baking soda
1 tsp baking powder
1 tbsp cinnamon
3 eggs
1/2 cup vegetable oil
1/2 cup unsweetened applesauce
1 tbsp vanilla extract
1 cup white or raw sugar
1/2 cup packed brown sugar
3 cups grated zucchini (do not drain the water)

Directions:
1. Grease and flour two loaf tins. Preheat the oven to 162 C / 325 F.

2. Mix together the dry ingredients in a medium bowl (flour, salt, baking powder, bicarb / baking soda, and cinnamon).

3. In a large bowl, beat together the eggs, oil, applesauce, and vanilla. Then mix in the sugars.

4. Gently add dry ingredients to wet ingredients.

5. Fold zucchini into the batter until well combined.

6. Pour batter into pans and bake until a toothpick comes out clean (50-60 minutes). If making cupcakes/muffins, bake for 15-20 minutes.

7. Serve with salted butter or DF alternative.
