Ingredients:
240 ml (2 cups) cold water
50 g (1.75 oz) fresh ginger, peeled and cut into 5 mm (1/4 inch) thick rounds
2 tbsp dark brown sugar
My friend introduced me to this traditional ginger tea recipe when one of us was unwell. There was no recipe except a general eye for ginger quantities and the scooping of spoonfuls of sugar. For years, I would recreate it when I was unwell and guess every time about quantities. It always turned out perfect.
Now that I have the ratios here, I will take the guesswork out of the process for all of us.
So what is this tea useful for? Ginger contains "gingerol" which helps with nausea and GI motility. It also contains antioxidants. Due to the spiced heat created by the steeped ginger and the soothing dark brown sugar, this ginger tea is also excellent for any irritated throats or sinuses. When I drink this tea as hot as is safely tolerable, I find literal sweet relief for my throat or sinuses.

2. Reduce heat and simmer the ginger for 10-15 minutes.
3. Add the dark brown sugar and stir to dissolve. Remove from heat.
4. Strain out the ginger and pour the tea in a mug.
5. Serve immediately, and drink the tea as hot as is safe and tolerable for best results.
