Tzatziki Sauce




Serves: 4

Ingredients:
2 tbsp fresh lemon juice
1-2 garlic cloves, minced
1.5 cups plain Greek yoghurt
1 cucumber, peeled, seeded, finely chopped
1/4 cup fresh mint, minced finely
2 tbsp fresh parsley, minced
1 tbsp fresh dill, minced
3/4 tsp salt 

Despite recollections of being a young picky eater, I remembered always loving my mum's version of foods from around the world. Some days, they would wind up in our lunch boxes where our school mates would eye them with disgust and curiosity. I was proud to like these 'different' food stuffs that were so drastically off-beat to the usual lunch-meat and cheese sandwich or traditional PB&J. 

When my mum prepared falafel, it was always paired with her homemade hommus and tzatziki. She would spend all day in the kitchen, taking the food processor for several joy rides, as she prepared each recipe from scratch--this was before the convenience of store-bought plastic packages. 
 
This recipe is for the cucumber-sauce lovers who don't want to grate and drain their cucumbers. This is one step easier and still reminiscent of traditional tzatziki. With a sharp zing of garlic in the fresh lemon, dill, and yoghurt, this tzatziki will keep your lovers far and your garlic lovers near.

Ingredients:

Directions:
1. In a small bowl, mix together the lemon juice and garlic and allow to rest for 10 minutes.

2. In a medium bowl, mix all of the tzatziki sauce ingredients together and serve cold.
