One Dollar Hommus

Serves: 325 g / 11.5 oz

Prep time: 15 minutes

Ingredients:
1-2 cloves garlic, peeled
2 tbsp white wine vinegar or fresh lemon juice
1 can (400 g / 15 oz) chickpeas, reserving liquid (as below)
3 tbsp chickpea liquid, reserved
2 tbsp tahini
2 tsp olive oil (or more to taste)
1/2 tsp cumin
1 tsp salt

Homemade hommus. Hommus among us. Humongous hommus. 

All of the above and then some. In fact, be prepared for garlic breath (and/or check out my tips and tricks, below, to mellow the zing). 

As you can guess by the title, this hommus only costs $1 to make (assuming your pantry has all the other basic ingredients). For 15 minutes and $1, can you really argue.... Okay, okay, I'll break down the costs here:

As of 9 September 2024:
Store-bought hommus = $1.20 AUD / 100 g or $0.50 USD / 1 oz
Cost of this $1 hommus? $0.29 AUD / 100 g or $0.08 USD / 1 oz

Now that we have that out of the way, who's ready to make a ruckus about hommus!?

Oh, right. So you want to avoid garlic breath--allow me to help you tame that beast. The first option is to use less garlic (opt for 1 clove instead of 2). If you love garlic but just want to be able to go to bed with freshly brushed non-garlic teeth, try this second option: mince the garlic and soak it in the vinegar or lemon juice for at least 10 minutes prior to blending with other ingredients. 

Ingredients:
1-2 cloves garlic, peeled
2 tbsp white wine vinegar or fresh lemon juice
1 can (400 g / 15 oz) chickpeas, reserving liquid (as below)
3 tbsp chickpea liquid, reserved
2 tbsp tahini
2 tsp olive oil (or more to taste)
1/2 tsp cumin
1 tsp salt

Directions:
1. If wanting to mellow the garlic, mince it and place in a small bowl with the vinegar / lemon juice for at least 10 minutes. 

2. Meanwhile, reserve 3 tbsp of chickpea liquid.

3. Pour the chickpeas in a bowl with warm water to help, and gently pinch off the majority of the skins. Discard the water and chickpea skins.
 
4. In a food processor, process all the ingredients (de-skinned chickpeas, garlic, vinegar/lemon juice, chickpea liquid, tahini, olive oil, cumin, and salt) until smooth and creamy. 

5. Refrigerate hommus or serve immediately.
