Smoked Salmon Fettuccini

Serves: 4 

Prep time: 15 minutes
Cook time: 25 minutes

Ingredients:
113 g (4 oz) butter
3 cloves garlic, minced
1/2 red onion, minced
450 g (1 lb) hot smoked salmon ("smoked salmon" in America), shredded
475 mL (1 pint) heavy cream
1 lemon, zested and wedged 
Salt & pepper, to taste
450 g (1 lb) fresh fettuccini pasta (or 300-350 g / 10.5 oz dried fettuccini or GF option)

Sometimes our parents are full of surprises. My dad, who is ordinarily the family baker or grill master, whipped this hand-typed recipe out for his mother's birthday dinner a few years ago. Of course I love butter, garlic, heavy cream, salmon, and the zest of a lemon. And despite my absolute gasped breath of love over it, I waited nearly two years to cook it again. Now that it's posted to the blog, don't be surprised if I start inviting you all over for dinner to try some! 

The salty salmon lifts in the cream sauce with aid from the citrusy lemon, which grows wings so each forkful easily reaches the mouth. Keeping the fettuccini al dente gives the right amount of bite to this absolutely scrumptious pasta dish. 

If you want to impress dinner guests, I highly recommend this easy and crowd-pleasing recipe. 

Ingredients:
113 g (4 oz) butter
3 cloves garlic, minced
1/2 red onion, minced
450 g (1 lb) hot smoked salmon ("smoked salmon" in America), shredded
475 mL (1 pint) heavy cream
1 lemon, zested and wedged 
Salt & pepper, to taste
450 g (1 lb) fresh fettuccini pasta (or 300-350 g / 10.5 oz dried fettuccini or GF option)

Directions:
1. If using dried pasta, cook it in boiling water until al dente, then drain, and set aside. 

2. Melt butter in a large sauté pan.

3. Add the garlic and onion to the butter and caramelise (about 5 minutes). 

4. Reduce the heat and add salmon and cream

5. Simmer the cream sauce until heated through and thickened (5 minutes), then turn off the heat. 

6. Stir in lemon zest and salt & pepper to taste. 

7. Carefully toss the fettuccini into the salmon cream sauce.

8. Serve immediately with additional lemon wedges.
