Avocado Chickpea Salad

Serves: 3-4

Prep time: 15 minutes

Ingredients:
1 can (450 g / 15 oz) chickpeas, drained & rinsed
2 avocados, chopped
1/3 cup parsley, chopped
2 tbsp scallions, chopped
100 g (3.5 oz) feta cubes
1 lime, juiced
salt & pepper, to taste

This is one of my favourite kind of recipes. It's easy. There's minimal chopping. There's one step. It takes less than half an hour. It's yummy. 

Avos and lime are amazing together. The spice of the lime with the sharpness from the feta dance between the earthiness of the chickpeas and the nutty avocados. Add a few herbs to elevate it (because that's what herbs do), and wham! The perfect side salad (or main!). 

Disclaimer: the original recipe called for coriander / cilantro instead of parsley. You're welcome, my friends, for being up front as you know I feel about coriander...

Ingredients:
1 can (450 g / 15 oz) chickpeas, drained & rinsed

Directions:
1. In a medium bowl, combine all the ingredients. Gently stir to mix, and serve cold.
