Apple Crisp

Adapted from: Shauna Moon

Serves: 4

Prep time: 20 minutes
Cook time: 45 minutes

Ingredients:
4-5 apples, thinly sliced
Vanilla or caramel ice cream (or vegan-alternative)

Topping:
1 cup rolled oats
1/2 cup flour or GF flour
1/3 - 1/2 cup brown sugar, packed
1/4 tsp salt
1 tsp cinnamon
113 g (1/2 cup) unsalted butter or dairy alternative, softened

There is nothing fancy about this crisp. It contains all typical ingredients. It is simple and requires minimal effort. Yet, it invites one to cosy on a couch in front of the fire with loved ones. I once cooked it over a coal fire on a camping trip and invited tent neighbours over to join. If there was ever the most idyllic situation I have eaten this crisp, that was it--cooling air, lush forest, twinkling stars and a hot apple crisp to end the evening.

Imagine biting into an entire experience of contrasts. The brain becomes alive! This crisp served just out of the oven is warm, yet cold with the ice cream. Soft apples compliment the very crispy topping and the fruitiness sets in with the nuttiness of oats and creaminess of vanilla ice cream.

I love this recipe because it is fast and easy to make and is an instant crowd-pleaser. If you don't have a special person, consider this a love potion or a friendship-former.

Ingredients:
4-5 apples, thinly sliced
Vanilla or caramel ice cream (or vegan-alternative)

Topping:
1 cup rolled oats
1/2 cup flour or GF flour
1/3 - 1/2 cup brown sugar, packed
1/4 tsp salt
1 tsp cinnamon
113 g (1/2 cup) unsalted butter or dairy alternative, softened

Directions:
1. Preheat the oven to 177 C / 350 F and spread out the apples in an 20 cm / 8” baking dish.

2. Mix the topping ingredients until it crumbles.

3. Sprinkle the crumble evenly over the apples. Bake until apples are soft when pierced (30-45 minutes).

4. Serve warm with cold vanilla ice cream.
