Avocado Lime Mint Salad

Serves: 3

Prep time: 15 minutes
Rest time: 30 minutes

Ingredients:
3 English cucumbers, chopped to 1/2 inch pieces
salt
2 avocados, chopped to 1/2 inch pieces
1-2 tsp fresh lime juice
1/2 cup mint, chopped
1/2 cup firm feta, crumbled

Dressing:
2 tbsp olive oil
2 tbsp fresh lime juice

This salad. THIS salad. It all began one rainy winter's day when planning my contribution to the family Christmas dinner, where we would be meeting in a fireplace-heated house with the hopes of fresh snow. I reflected on what my family might prepare: cheesy potatoes, ham, green bean casserole, fresh bread, etc... all following a charcuterie board full of soft cheeses, salami, nuts, and crackers. And it was then that I decided to prepare a salad that would taste like summer amidst this winter-ful meal. And it served its purpose delightfully among all eighteen of us. 

I love this side salad because it is bright, fresh, a hint of the sub-tropical, and definitely served best whenever you feel like it--winter or summer. It's also way too easy to make. Have I made this salad when lime cost over $1 each and avos were over $3 each? I will not definitively give an answer to that question...

Ingredients:
3 English cucumbers, chopped to 1/2 inch pieces
salt
2 avocados, chopped to 1/2 inch pieces
1-2 tsp fresh lime juice
1/2 cup mint, chopped
1/2 cup firm feta, crumbled

Dressing:
2 tbsp olive oil
2 tbsp fresh lime juice

Directions:
1. Add the cucumbers to a large bowl and sprinkle them with salt. Let stand for 30 minutes and drain off any excess water.

2. Add the avocado to the cucumbers and squeeze 1-2 tsp lime juice over the avocados.

3. Add the mint and feta to the greens.

4. Whisk the dressing ingredients together in a small bowl, drizzle it over the salad, and gently stir it in to mix. Serve immediately.
