If you're looking for a warm and cosy meal that incorporates seafood, look no further! This crustacean meal is similar in profile flavour to my jambalaya, though more herb-y and Mediterranean-like. I like this recipe because it is easy, it includes wine (of course!), and I usually have most of the ingredients on hand.

1. Set oven to 218 C / 425 F. Cook the orzo until al dente. Drain and set aside.

1 large onion, diced (1.25 cups)
3-4 cloves garlic, minced
1 tsp chili flake
120 ml (1/2 cup) white wine
2 cups tomatoes, diced
1 tsp dried oregano
1 tbsp dried chives
113 g (4 oz) feta
2 tbsp lemon juice
salt & pepper
340 g (3/4 lb) prawn / shrimp

Directions:

2. Heat olive oil in a large pan and sauté onion until softened, about 5 minutes.
3. Add garlic and red pepper flakes. Stir until fragrant, about 30 seconds.
4. Add wine, tomatoes and oregano and bring to a boil.
5. Reduce heat to a simmer, then cook for 5 minutes.
6. Add chives, feta, and lemon juice. Season with salt and pepper to taste.
7. In a baking dish, mix the raw prawn, cooked orzo, and tomato mixture together and cook for 15-20 minutes, or until shrimp is cooked through.
8. Serve immediately.
