Japanese Vegetable Pancakes (Okonomiyaki)

Serves: 4

Cook time: 45 minutes

Ingredients:
1/2 head cabbage, thinly sliced
4 medium carrots, grated
5 kale leaves, chopped small
4 scallions, thinly sliced
1 tsp salt
1/2 cup all-purpose flour or GF flour
6 large eggs, beaten
Oil for frying (vegetable or canola)
Soy sauce (I use reduced sodium) or GF tamari

Sauce:
~1 cup mayo
~2 tsp rice vinegar
~1 tbsp sugar

Mmmmm what is not to like about these? I love this okonomiyaki recipe because it has very simple, whole-food ingredients, at least three proper vegetables, and is a beautiful combination of flavour. The salty soy with the partially fried pancake and the sweet and vinegary mayo? So perfect! These are also great as leftovers, reheated in the microwave. I usually eat these as a stand-alone meal. But I'm weird like that. You do you!

Ingredients:

Sauce:
~1 cup mayo
~2 tsp rice vinegar
~1 tbsp sugar

Directions:
1. Toss cabbage, carrot, kale, scallions, and salt in a very large bowl.

2. Coat vegetables in flour. Then coat with the eggs. I usually do these steps with my bare hands. Let me know if you find a more efficient option.

3. Heat a large skillet to medium-high heat and coat with oil.

4. Carefully scoop some of the vegetable mixture into the skillet until it fills the skillet in an even, thin layer (about 1/2 inch thick). Gently press the pancake flat.

5. Cook pancake until browning, and able to shift around without a spatula (3-3.5 minutes).

6. Flip the pancake (or slide onto a plate, first, and flip back over the pan).

7. Drizzle the pancake with a splash or two of soy sauce. Cook about 1 minute, until browned. Remove from heat.

8. Continue cooking pancakes until all the batter is used up (about 30 minutes).

9. While pancakes are cooking, mix together sauce ingredients, to taste.

10. Serve okonomiyaki with sauce on top and additional soy if preferred.
