Cinnamon Rolls / Scrolls

Serves: 8 rolls

Prep time: 20 minutes
Rest time: 60 minutes
Cook time: 20 minutes

Ingredients:
240 mL (1 cup) milk
1 packet of yeast (about 2 tsp)
1.5 cups pastry flour (homemade: 3 tbsp cornstarch/cornflour mixed with 1.25 cups + 1 tbsp all-purpose flour)
1 cup all-purpose flour
1 tbsp baking powder
1/4 cup sugar
1/2 tsp cinnamon
1/4 tsp salt
1/4 cup unsweetened applesauce

Filling:
1/2 cup brown sugar
1 tbsp cinnamon
28 g (2 tbsp) unsalted butter, softened

Icing:
1 cup icing / powdered sugar
115 g (1/2 cup) softened cream cheese
1 splash vanilla extract
1 pinch of salt

If you have ever had my cinnamon rolls/scrolls, this is the recipe. THE RECIPE. You guys. This is my absolute most favourite delicious thing I make. And that's actually hard to say as I reflect on the chocolate pudding and carrot cupcakes... but no. I stand by it. Cinnamon filling. Cream cheese frosting. A perfect dough. This is it. And they are relatively cheap and easy to make. If you love cinnamon filling, it is easily doubled and delicious. 


Ingredients:
240 mL (1 cup) milk
1 packet of yeast (about 2 tsp)

1 cup all-purpose flour
1 tbsp baking powder
1/4 cup sugar
1/2 tsp cinnamon
1/4 tsp salt
1/4 cup unsweetened applesauce

Filling:
1/2 cup brown sugar
1 tbsp cinnamon
28 g (2 tbsp) unsalted butter, softened

Icing:
1 cup icing / powdered sugar
115 g (1/2 cup) softened cream cheese
1 splash vanilla extract
1 pinch of salt

Directions:
1. Warm milk to 43 C / 110 F, transfer to a large bowl, and dissolve yeast. Set aside. 

2. In a medium bowl, combine the flours, baking powder, sugar, cinnamon, and salt

3. In a small bowl, combine the filling ingredients and set aside. 

4. After the yeast and milk are foamy (5-8 minutes), stir in applesauce. If the yeast has not foamed yet, add the applesauce and wait for it to foam. 

5. Add milk mixture to the dry ingredients and stir until a dough forms.

6. Turn dough on a floured surface and knead for a minute (about 20 times).

7. To prevent the dough from getting sticky, knead in up to 1/4 cup flour.

8. Roll dough into a large rectangle. Sprinkle filling over the dough.

9. Roll the dough up firmly (in the long direction) to make a log. Cut into 8 equal pieces and place in a greased 8x8 inch pan.

10. Cover rolls with a clean towel and let rise in a warm place for at last 40 minutes before baking.

11. Preheat oven to 177 C / 350 F. Bake rolls for 18-22 minutes until slightly browning and cooked through.

12. Combine icing ingredients in a small bowl. Spread over rolls when they are slightly cooled. Serve warm!
