Simply Hearty Cornbread

Serves: 8-12 (8" round)

Prep time: 10 minutes
Cook time: 20 minutes

Ingredients:
1 cup cornmeal (“polenta” in Australia)
1 cup all-purpose flour (or GF flour blend)
1 tbsp baking powder
1/2 tsp bicarb / baking soda
1/2 tsp salt
57 g (1/4 cup) unsalted butter or butter alternative, melted
1 tbsp honey
250 ml (1 cup) whole milk or milk alternative
butter spread (for serving)
honey (for serving)

If you love cornbread out of a box, this isn't the recipe for you. Incidentally, if you are looking to move away from cornbread out of a box, this might also be an alarming adjustment. 

I love this cornbread because it is rough and rugged and easy to make. When it is warmed with butter and honey, the combo is like a perfect matrimony especially when served with my quinoa chili. This recipe is intentionally not sweet. It can be sweetened with honey or sugar (I opt for honey). 

I once experimented with making my own gluten-free flour (hello, Professor Google) to made a tried-and-true lemon cake (to be posted in the future). It was a disaster. However, I salvaged the remaining flour and it works so beautifully with the cornmeal/polenta in this recipe.

This cornbread is also nice when it becomes vegan/dairy-free (substituting 1:1 sugar, vegan butter, and alternative milk). 

Ingredients:
1 cup cornmeal (“polenta” in Australia)

Directions:
1. Preheat oven to 218 C / 425 F degrees. Grease an 8x8 inch pan or an 8” round.

2. In a medium bowl, combine the dry ingredients.

3. In a small bowl, combine the wet ingredients.

4. Add wet ingredients to dry ingredients and stir until just mixed.

5. Pour batter into pan and bake for 16-22 minutes, until a toothpick comes out clean.

6. Serve with butter and honey.

  1. Super easy to make! Def microwave it before you eat it on the second day, etc; made it more moist. And don’t forget the butter and honey!
